Vegan | Paleo | Keto | Blueberry Muffins w/Vegan Blueberry Cream Cheese

Muffins!!! YAY! I had been craving muffins for a long time. When I think of something or have a craving I have to satisfy it in a healthy way. I made so many muffins with this batch. Muffins are one of my favorite recipes to make. They are so quick and easy to make. I love their shape and how versatile I can be with them. Flavors and texture are limitless with muffins. I enjoy eating them as they have a thick, yet moist texture. I find that texture is right up there with micronutrients in terms of satiety. We want to eat until we are satisfied and these muffins will definitely satiate you, while satisfying your sweet tooth or texture tooth haha. For this recipe I used blueberries. I love blueberries because they are low glycemic fruits. A low glycemic fruit is low in carbohydrates. They are digested slowly, which gives the digestive tract a break to absorb and metabolize the nutrients. Low glycemic fruits and foods in general cause a lower and slower rise in blood glucose, maintaining normal insulin levels. The lower on the glycemic index the better. Another reason I love blueberries is the fact that you don’t have to count calories and can eat a huge bowl of them if you’d like. One cup of blueberries is extremely low in calories so you can basically eat them until you are satisfied. I mean has anyone overeaten on blueberries? I’ll wait! Haha

The last reason I love using blueberries is because of their dark rich color created by the flavonoids. Flavonoids in the blueberries reduce risk of cancer, heart disease, asthma, and stroke. These beautiful fruits were added to these DELICIOUSLY YUMPTIOUS SCRUMPTIOUS vegan, paleo, keto muffins. Now you may be saying to yourself, “How can something be vegan and paleo at the same time?” Others of you may be saying, “How can something be vegan, paleo, and keto?” Then there are some that may say, “I have no idea what these words even mean.” NOT TO WORRY all will be answered.

I am a vegan so this recipe is plant based. Educating people is a passion of mine and yes there are still people on this earth who do not know what vegan is. I have no problem explaining exactly what being a vegan is. Vegans do not eat animal flesh aka “meat”, dairy (milk, eggs, cheese, etc.), seafood (shrimp, fish, shellfish, etc.), gelatin (made from pig bones). Vegans usually eat veggies, fruits, beans, nuts, seeds, grains, etc. A paleo diet requires one to refrain from eating beans, grains. Someone who eats paleo does still eat animal flesh, seafood, eggs, vegetables, fruits, nuts, seeds, healthy fats, and oils. Keto short for ketogenic is a low carb diet. It consists of eating a diet that is higher in fat, this way the body uses fat for fuel and burns it. It is a popular weight loss diet for many people. Similar to paleo, people on a keto diet eat seafood, dairy, animal flesh, oils, avocados, and low carb veggies, so no starchy veggies.

 

Vegan, paleo, keto, blueberry muffins uniquely fit into each category as they are 100% vegan. All ingredients are plant based, grown from a plant. These muffins are paleo in that they have no beans and no grains. They are keto as they are high in yummy healthy fats and low in carbs. Ah now you can take a deep breath! You get it now? Great! Now the fun part is how do you make these?! Check out the recipe below:

Ingredients

Makes 12

2 cups of almond butter

1 cup of coconut flour

1/4 -1/2 cup of water

1-2 tablespoons of Stevia (do 1 teaspoon if too sweet)

2-4 pitted medjool dates (optional; if you want it sweeter)

1 1/2 cup of frozen blueberries (fresh works as well, but more nutrients in the frozen)

Kite Hill plain vegan cream cheese

 

Directions

Preheat oven to 400 degrees

1. In a mixing bowl pour the water in

2. Scoop the almond butter with a spoon or a cup measure and place into the mixing bowl with the water

3. Stir with a spoon or use a whisk to whisk the water and almond butter together (If you add the medjool date, then blend in a high-powered blender with almond butter and water first)

4. Once fully combined add the Coconut flour and 1-2 tablespoons of Stevia depending on your sweetness level.

5. Mix all ingredients with a spoon

6. Add frozen blueberries and give it a rough mix until the mixture is thick and stiff

7. Roll into dough balls and place in muffin pan

8. Place muffin pan in the oven and bake for 30-45 minutes

9. Let them cool for 10-15 minutes

10. Blend 1/2 cup of frozen or flesh blueberries in the blender with 1/4 cup of water until smooth

11. Add it to the container of Kite Hill vegan cream cheese and voile you have blueberry cream cheese. To sweeten this add either 1 teaspoon of Stevia or 2 pitted medjool dates and blend all ingredients in the blender until thick and smooth.

12. Spread over each beautiful, gorgeous, delectable (mouth is currently watering) muffin

13. Eat and enjoy lovelies!

Always remember you do not have to use a lot of ingredients to enjoy this healthy treat. If you love desserts do not deprive, just alter ingredients to suit your dietary needs. These are something you can make everyday if you wish, lose weight, and most importantly feel healthier.
